Phyllo Lamb Roll
(Relleno de Cordero)

Ingredients: (for 2 servings)

· 3 tbs. olive oil
· 1 cup of pre-cooked lamb chops (cut into thin strips). You may substitute lamb with any other meat.
· ½ lemon
· ¼ cup crushed garlic
· 2 tbs. onions
· Dash of salt (optional)
· Pinch of pepper (optional)
· 2 sheets of phyllo dough
· ½ cup of fresh spinach
· ¼ cup ham (serrano ham if possible)
· ½ cup of feta cheese

Preparation Instructions:

1. Place a pan over medium heat.
2. Add olive oil.
3. Place shredded lamb in the pan, squeeze lemon juice.
4. Add garlic and onions.
5. Add salt and pepper (if desired).
6. On two sheets of phyllo dough, add fresh spinach, ham, feta cheese, and shredded lamb.
7. Gently roll from one end to the other.
8. Place the roll into a baking pan, or oven safe plate.
9. Brush with butter, if desired, to give it a golden appearance.
10. Place roll into a 350 degree pre heated oven for 2-3 minutes (or until it appears to be crunchy and flaky).
11. Take a sharp knife, and cut it into desirable slices (preferably 4-3).
