Spanish Omelet
(Tortilla Española)

Ingredients: (for 2 servings)

· 1 tsp. Golden Griddle butter alternative (can be substituted with 1 tsp. vegetable or olive oil)
· 2 eggs
· 2 tbsp. onions
· ¼ cup ham (Serrano ham if possible)
· 1 small chorizo (Spanish sausage)
· ¼ cup diced cooked potatoes
· 1 tsp. capers
· Pinch salt
· Pinch pepper
· Pinch of parsley and onions, or green peas or red pimento (for garnish)

Preparation Instructions:

1. Place vegetable oil in a small frying pan (Teflon coated preferable) and place over medium heat.
2. In a bowl, crack eggs and beat well.
3. Add onions, ham, chorizo, potatoes, and capers to the eggs.
4. Add a pinch of salt and pepper.
5. Stir mixture and pour into frying pan.
6. Cook on medium heat until bottom of omelet is light brown, then place in 350° oven for 2 to 3 minutes until top is firm.
7. Garnish with parsley and onions, or peas or red pimento if desired.
